Thin cats?
When we got Darcy she was about 11 lbs. She's thin but VERY long and tall. She's now about 10 lbs but the vet didn't seem worried. Should we just figure she's a thin and tall cat? She eats a lot and is drinking and pooping ok. She's extra snuggly too. No dental problems (got 2 teeth removed a month ago because they were icky)

Can you remind us of her situation and how old you think she is? I would be somewhat concerned about a young, still growing cat truly losing weight. However, weighing animals precisely is difficult, so unless she was weighed both times at the vet, I doubt you can be absolutely certain her weight dropped. 10-11 lbs for a young female MC is certainly fine. I must also say that most vets are not too familiar with MCs, so don't always understand how they should be growing. I remember that when we took our first purebred MC kitten in one of our vets thought the breeder was lying about its age (due to the size). As far as I know, we are still the only client at our vet that has purebred MCs (the techs have told me that someone else claims to have a MC, but they say that if she could see ours, she would realize that she definitely does not have a true MC).

Darcy will be 5 years old in December. The first vet weighed her differently then the 2nd vet did (We changed vets after the first visit) So that might have something to do with it
She is extremely long 40" and I've not measured how tall she is but she's a very big girl. I'll attach a pic of me holding her and you can see how big she is

Weight variation is probably mainly due to different scales. I have seen that our bigger female appears to have lost a few ounces this summer (along with lots of fur), so it could be that there is some natural change in weight with season as in many animals. If Darcy is five then she is no longer growing, but may still fill out some. One of our two girls is only a bit over 11 lbs. Both of our girls are relatively thin and "bony" compared to our two boys. And some MCs are just thinner than others (we did have a boy who was very lanky and thin). I assume vet has had you bring in a fecal sample to check for parasites? If she otherwise eats and has normal stools, she is probably just fine.
